Cooking with Midge: Pork Chops For 9? Ok, I’ll try!

Well, things have been shaken up for us a bit, and I’m staying with my sister, brother in law, and their two children along with all four of my little kiddos. Nine of us under one roof! That’s a lot of cooking to be done! Luckily my brother in law is a pretty good cook and he’s been teaching me a few things. Last night was pork chop night and he had to work late, so it was up to me to do it all by myself. AAAAAAAAAAAAAAAAHHHHHHHHHHHHHHHHHH!!!!!!!!!!!!!!!!!! I wondered what the fire department was like in this area.

Luckily before we all went to bed the night before he gave me a verbal run down how to cook the pork chops and I wanted to cook them the way he wanted them done. First, I needed to turn the oven on to broil. Their oven is an electric oven and I haven’t used one of those in 7 years. Good thing the operation of the oven is about the same, only I don’t need to light the burners, just turn them on. Simple.

Second, my instruction was to put a little water in the bottom of the broiling pan. I guessed which one was the broiling pan. I don’t have one at home. I hoped I guessed right.

Next, I was to season the pork chops with the Steak ‘n Chop Seasoning by Weber. Just a light dusting on both sides. Ok. It didn’t look like much seasoning, but that is what I did. Then I threw them in the oven. Well, not literally threw them, that would be stupid, but you get what I mean.

We were to have steamed veggies with dinner, and I grabbed a bag of frozen peas and carrots. The bag felt like it had one great big rock in it.

I read the instructions for steaming and opened the bag. The peas and carrots were all stuck together in one giant lump and I couldn’t get them out of the bag, so I ended up tearing up the bag a bit. I put a little water at the bottom of the steamer and the veggies on the basket part of the steamer pan. And I stared at it a minute. There was no way I was going to be able to get the lid on the steamer.

I really didn’t expect the veggies to be the part to throw me for a loop. I thought about it and decided to stab the veggies murderously till they were loose enough to cover with the lid. That took about 15 minutes.

Then I flipped the pork chops over and was able to put the lid on the veggies to steam them. That was when I heard from a friend I had been chatting with that she beats the bag of frozen veggies against the counter before she opens the package. It didn’t say that on the instructions! I’m going to have to write them a letter!

Dinner was finished and actually didn’t look bad. The veggies were a little overcooked, a bit on the squishy side, but the pork turned out pretty good. My kids actually enjoyed it!
